THE READ
The Reuben is a laminar flow system. Everything in its correct layer: bread, meat, cheese, ferment, sauce. The sauerkraut introduces the right amount of acidity to prevent the whole thing going laminar-flat. The mustard is the transition point — the Reynolds number crossing the threshold.
DZ Akin's has been running this system since 1980. Same location off the I-8. No rebrand. No pivot. No algorithm. Just the recipe, held correctly, for 46 years.
